Ricotta and Sage Filo Pizza

The new year is upon us and as we get back into the swing of things after the busy period, easy, healthy meal options are essential. This was a lunchbox favourite for me when I was at uni. Packed full of flavour AND veggies, you really can't go wrong. The best thing about this recipe is that it tastes great both hot and cold.
INGREDIENTS
2 med Zucchini
1 butternut pumpkin
4 large garlic cloves
4 carrots
2 large red capsicum
2 large handful cherry tomatoes
2 red onion
12 sheets filo pastry
Oil for roasting veggies
Butter for brushing pastry
12 tablespoons of ricotta
4 tablespoons of Dried sage
2 tablespoons of dried oregano
1/2 cup tasty or mozzarella cheese
METHOD
Preheat oven to 180 degrees
Mix 2 tablespoon sage,1 tablespoon oregano and ricotta and put in the fridge
Chop up all vegetables into small pieces. Chop the pumpkin and carrots into smaller pieces because they take longer to roast.
Mix all veggies in a bowl with olive oil and 2 tablespoon of sage and 1 tablespoon of Oregano. Season with salt and pepper.
Spread all veggies out evenly on a roasting tin
Roast veggies until soft - turning every 15 minutes
Allow veggies to cool slightly while preparing pastry
Turn up the oven to 200 degrees
Prepare a a large baking tray with baking paper
Prepare a clean and dry surface. Brush pastry with melted butter. Layer another sheet on top and repeat = stack of 3 pastry sheets on top of each other.
Spread ricotta and sage mix on top of the filo. Add some roast vegetables on top. Sprinkle tasty/mozzarella cheese over the top.
If you have any left over roasted veggies = use as leftovers in your salad or freeze
Cook for approximately 20 minutes until crispy and golden
Here is a picture of a different version I have previously made with whatever I could find in the fridge/pantry. This one has a pesto base, sliced button mushrooms, capsicum, spinach, red onion, a tin of chickpeas, mozzarella cheese, some pine nuts sprinkled on top and a drizzle of olive oil.
