Creamy & Crunchy Apple Salad


4 cups fresh broccoli florets (about 2 heads)

2 large apples, chopped

1/2 cup shredded carrots (tip: don't peel the carrots for extra fibre)

1/2 cup cranberries/sultanas

1/4 cup red onion or spring onion, sliced

1/2 cup of nuts of choice (walnuts/pecans/peanuts/pine nuts)

2 tablespoons lemon or lime juice

1/2 cup mayonnaise

1/2 cup greek yoghurt

1 tablespoon of sugar or honey

Salt and pepper to taste


  1. Add the broccoli, apple, sultanas, nuts, onion and carrot to a large bowl

  2. In a small bowl, mix the mayonnaise, yoghurt, sugar or honey and lemon/lime juice

  3. When ready to serve, mix the salad dressing with the ingredients in the large bowl

  4. Season with salt and pepper and enjoy!
