Spanish Tuna Pasta Bake


INGREDIENTS: 250g penne or spiral pasta

1x large brown onion – sliced

2-3 tablespoons of minced garlic (or 2 cloves crushed)

1x large red capsicum

¾ cup of grated cheese (mozzarella or cheddar)

2x 400g cans of crushed/chopped tomatoes

2x large 185g cans of tuna in oil (drained)

1 cup of sliced mushrooms

¾ cup pitted olives (kalamata or green) chopped in half

1 large tablespoon olive oil

1/3 cup finely grated parmesan

1 tablespoon of tomato paste

1 tablespoon of Mixed herbs

1 tablespoon dried oregano

Salt and pepper

Chilli flakes to serve

METHOD:

  1. Preheat oven to 200 degrees.

  2. Lightly grease a large oven proof baking dish

  3. Cook pasta as per instructions on the packet in boiling salted water

  4. Drain pasta and set aside

  5. Heat the olive oil in a fry pan over medium-high heat

  6. Add the chopped onion and capsicum and cook until the onion has softened (translucent/brown in colour)

  7. Add the garlic to the pan and stir for 2 minutes

  8. Add the cans of tomato and tomato paste. Bring the mixture to a boil and reduce the heat to medium.

  9. Cook the sauce for 5-10 minutes until thickened

  10. Add the pasta, olives, mushrooms and tuna and toss until all ingredients are combined

  11. Pour the pan contents into the oven proof dish

  12. Season with salt and pepper

  13. Sprinkle with cheese and parmesan

  14. Bake in the oven for approximately 15-20 minutes or until the cheese is golden brown and melted

  15. Optional: Serve with chilli flakes
