Choc Raspberry Muffins
I made these over the weekend and they were delicious and so easy to throw together! I loved them for a semi-sweet snack and they will be popped into my lunch box for next week. This recipe freezes well so if you have the time make a double batch and keep some in the freezer.
2 cups flour
1/2 cup sugar
2/3 cup cocoa powder
1 tsp baking soda
1 cup vanilla yoghurt
1/3 cup vegetable oil
1/2 cup milk
1 -1/5 cups raspberries (I used frozen)
1. Preheat oven to 180 degrees celcius
2. Wisk together egg, yoghurt, oil and milk in a large bowl. In a separate bowl mix together the dry ingredient. Combine the wet and dry ingredients and mix until just combined.
3. Add raspberries and mix in gentle.
4. Spoon mixture into muffin cases and cook for approx 18-20minutes or until an insertered skewer is removed clean.
