Wholemeal Apple Muffins
This would have to be one of the easiest muffin recipes out there (that is incredibly tasty too!). I make these regularly and pop them in the freezer so I always know that I have snack options ready for big days. These muffins are packed full of fibre which makes them a filling snack to get you through the afternoon slump or they could be a really quick and light breakfast. They are a great option for kids lunch boxes too.

Ingredients
1/2 cup apple puree or stewed apples
2 apples grated
1 egg lightly beaten
1 cup milk (what ever milk you have)
1/4 cup oil
2 cups wholemeal self raising flour
1/2 cup quick oats
1 tablespoon brown sugar
1 teaspoon cinnamon
Method
Preheat the oven to 180 degrees Celsius and grease muffin tray
Combine apple and apple puree, egg, milk and oil in a large bowl.
Add remaining ingredients and mix until just combined.
Spoon mixture into prepared muffin tin.
Bake for 20-25 minutes or until the muffins are golden brown or until a skewer inserted into the centre of the muffin comes out clean.
