Wholemeal Apple Muffins

This would have to be one of the easiest muffin recipes out there (that is incredibly tasty too!). I make these regularly and pop them in the freezer so I always know that I have snack options ready for big days. These muffins are packed full of fibre which makes them a filling snack to get you through the afternoon slump or they could be a really quick and light breakfast. They are a great option for kids lunch boxes too.

Ingredients

  • 1/2 cup apple puree or stewed apples

  • 2 apples grated

  • 1 egg lightly beaten

  • 1 cup milk (what ever milk you have)

  • 1/4 cup oil

  • 2 cups wholemeal self raising flour

  • 1/2 cup quick oats

  • 1 tablespoon brown sugar

  • 1 teaspoon cinnamon

Method

  1. Preheat the oven to 180 degrees Celsius and grease muffin tray

  2. Combine apple and apple puree, egg, milk and oil in a large bowl.

  3. Add remaining ingredients and mix until just combined.

  4. Spoon mixture into prepared muffin tin.

  5. Bake for 20-25 minutes or until the muffins are golden brown or until a skewer inserted into the centre of the muffin comes out clean.
