Chocolate Orange and Almond Cake (Jaffa Cake)
After posting a picture of this cake on Facebook the other week I had ALOT of people asking for the recipe. So here it is!
1 1/4 cup self-raising flour
1/2 teaspoon bicarb soda
1 cup LSA (ground linseeds, sunflower seeds and almond meal)
1 cup caster sugar (I ran out of caster sugar so I ground raw sugar which worked just as well)
1/2 cup olive oil (you can also use rice bran oil)
2 tablespoons of finely grated orange zest
1/2 cup fresh orange juice
3 eggs lightly beaten
1 block dark chocolate
1 tablespoon unsalted butter
Preheat the oven to 180 degrees C
Grease a 20cm round cake tin, place baking paper on the base
In a large bowl, mix together the flour, bicarb, LSA and sugar. In another bowl, whisk together the oil, orange zest and juice and eggs
Add the wet mixture to the flour mix until the mixture is smooth
Poor the mixture into the cake tin. Bake for about 30 minutes or until a skewer inserted into the centre of the cake comes out clean.
When the cake is finished set aside and start making the icing. Break the chocolate into pieces in a microwave bowl. Add the butter. Microwave in 30 second increments until the chocolate is melted. Stir well.
While the icing is still warm, pour over the cake and spread evenly.
