My Healthy Take on ANZAC Biscuits

I love ANZAC biscuits but they aren't the healthiest option for a treat. So I decided to jump in the kitchen to experiment with some healthier alternatives. What makes this recipe better? I have taken out the butter and replaced this with olive oil. This reduces the amount of saturated fat and boosts the amount of healthy fats and antioxidants. I also reduced the amount of sugar from the original recipe and added apple puree. Not only does this boost the amount of fibre it also adds a great flavour.

Something that I do have to point out is that these are still biscuits. They may be a healthier version, but this doesn't mean that portions don't matter. So enjoy as a treat every now and then :)


  • 1 cup oats

  • 1 cup flour

  • 1/4 cup olive oil

  • 1/4 cup brown sugar

  • 1.5 tablespoons golden syrup

  • 1/2 cup apple puree

  • 1/4 cup coconut

  • 1 tablespoon water


1. Preheat the oven to 180 degrees Celcius

2. In a large bowl mix together the oats, flour, sugar and coconut

3. In a small bowl mix together the olive oil, golden syrup, apple puree and water

4. Combine the dry and wet ingredients until they just hold together

5. Divide the mixture into 10 portions. Roll into balls, flatten slightly and place on a baking tray lined with baking paper

6. Bake for 15-20 minutes or until golden brown

Makes 10 biscuits
