Salmon and White Bean Salad

This salad is a great lunch option for a busy work week or as a simple dinner when you don't feel like cooking. For some reason the first thing I notice when people are trying to lose weight is they have only tuna and salad for lunch. This is fine, except what I have found is that this leaves you hungry pretty quickly after you have eaten leading to afternoon snacking. The simple addition of beans to a salad can boost the amount of protein and fibre which helps you feel fuller for longer. This will also include some carbohydrate in your meal to help avoid the afternoon energy slump.


  • 1 large tin tinned salmon in spring water

  • 1 can salt reduced cannellini beans

  • 3 tomatoes

  • 1 cos lettuce

  • 1 capsicum

  • Juice of half a lemon

  • 1 tablespoon olive oil

  • Pepper to taste

Serves 4
