Wild Rice and Wakame Salad

This salad would have to be my all time favourite! Not only does the colour look amazing it tastes pretty good too. The best part is that most of the ingredients come straight out the freezer so it really is a throw together. I took it along to a pot luck dinner and everyone was asking me for the recipe... so here it is so you can impress your friends and family.


1/2 packet wakame defrosted (found in the freezer of Asian supermarkets)

1/2 cup shelled edamame or soybeans (also from Asian supermarkets) cooked as per instructions

1 cup frozen peas

1 cup cooked wild rice

2 shallots sliced

Handful of mint

Serves 6-8

This salad looks very impressive when served on a darker platter!
