Wholemeal Banana Pancakes
Every weekend I try to have something that feels more special compared to my weekly breakfast. As I don't have too many options for going out for breakfast I try and recreate cafe classics at home... with a nutrition twist! One of my go to recipes is these deliciously filling wholemeal pancakes. This recipe is easy to throw together and even get the kids involved and has a whopping 6 grams of fibre per serve!!!

Ingredients
1 cup low fat milk
1 tablespoon lemon juice
1 egg
1 ripe banana smashed
1 teaspoon vanilla extract
250g wholemeal flour
3 tsp baking powder
60g caster sugar
Method
1. Combine milk, lemon juice, egg and vanilla extract
2. Add the mashed banana to the wet mix
3. Combine flour, baking powder and sugar in a large bowl
4. Add the wet ingredients to the dry ingredients and mix until just combined
5. Heat a fry pan on a medium heat
6. Spray some oil on the pan and ladle the mixture in small batches
7. Cook the pancakes until bubbles appear on the surface. Flip the pancakes and cook for another minute or until golden brown on the bottom and cooked through.
8. Serve with your favourite toppings (I use fruit and yoghurt)
Serves: 4 (3 pancakes each)
